To decaffeinate coffee using the sugarcane method, the beans are first steamed to open them up. Then they’re soaked in ethyl acetate, a natural compound derived from the fermented sugarcane mixed with acetic acid. This grabs onto the caffeine and pulls it out of the beans. This step happens a few times until most of the caffeine is gone. After that, the beans are cleaned, steamed again to remove any leftovers, and dried. The result is a coffee that keeps its original flavour but won’t keep you up all night.
